Vichyssoise (Cold Leek & Potato Soup)

Vichyssoise is a cold potato and leek soup of French origin. This simple soup shouldn't be underestimated as it’s packed with flavour and can be made by almost anyone. In this version, we replace the traditional cream with our BAMnut Milk Airy.

Ingredients
  • 1 potato, peeled and diced
  • 1 leek
  • 1 shallot
  • 1 tbsp extra virgin olive oil
  • ½ cup of chicken stock
  • 1 cup of BAMnut Milk Airy
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Directions
  1. Dice the leek and shallots.
  2. Sautee leek and shallots in olive oil until soft (about 3-5 mins).
  3. Add potatoes and saute for 1-2 minutes.
  4. Add chicken stock and BAMnut Milk Airy to pan and bring to a boil.
  5. Lower heat and simmer until potatoes are soft.
  6. Puree in blender till smooth, and add salt and pepper to taste.
  7. Add a pinch of nutmeg powder (optional).
  8. Let it chill in the fridge for at least an hour.
  9. To serve, add chopped chives and a dash of olive oil (optional).
