Creamy Tahini BAMnut Noodle Soup Recipe

Your go-to meal for winter is here! This hearty and creamy bowl of noodle soup, featuring the goodness of BAMnut noodles and BAMnut milk, will keep you warm and satisfy your tastebuds.

Ingredients

For the broth:

  • 1 tbsp tahini
  • 2 cups BAMnut Everyday Milk
  • 2 tsp chili garlic sauce
  • 4 garlic cloves, minced
  • 1 tbsp soy sauce
  • 2 tsp brown sugar
  • 1 tbsp neutral oil 
  • 2 cups mushroom stock (from the dried mushrooms)
  • 1 cup dried shiitake mushrooms, pre-sliced

For the rest of the dish:

  • 2 blocks of BAMnut Noodles
  • 7 oz pre-marinated baked tofu
  • 1/2 cup frozen edamame
  • 1/2 cup frozen sweet corn
  • 2 scallions, sliced

Directions
  1. Rinse the dried shiitake mushrooms with water. Soak the mushrooms in a container with 2 cups of water for at least 1 hour or overnight.
  2. Heat oil in a pot. Add garlic. After a minute, add the mushroom stock, soy sauce, chili garlic sauce, brown sugar, tahini, and BAMnut Milk. Bring to a boil and lower to a simmer for 10-15 minutes. Remove the mushrooms and set aside.
  3. Meanwhile, heat the pre-marinated baked tofu according to the package instructions. Thaw the edamame and sweet corn by microwaving for a minute. Cook the BAMnut Noodles and set aside.
  4. To assemble, add the BAMnut Noodles to a bowl along with the broth. Top with a few pieces of shiitake mushroom, tofu, edamame, sweet corn, scallion, and sesame seeds.
