This homey and rustic spinach quiche recipe is a great dairy-free alternative for your weekend brunch.

Ingredients

Filling Ingredients

1 tbsp extra virgin olive oil
30g onion, diced
50g spinach
1 clove garlic, minced
1 egg
100ml BAMnut Milk Barista

Pastry Ingredients

65g all-purpose flour
10ml water
40g butter

Directions

Preheat your oven to 180 degrees Celsius.
Combine your BAMnut Milk Barista and egg in a bowl. Set aside.
In a pan, add your olive oil, garlic and onions and sautee till softened.
To the same pan, add in spinach and sautee till wilted. Set aside.
For the pastry, combine flour, butter and water in a stand mixer until it forms a dough.
Roll out your dough until it’s roughly 3mm in thickness.
Put the dough into a 10cm mould, and trim the excess dough off the edges.
Line the dough with parchment paper and fill with baking beans or uncooked rice.
Bake for 10-15 minutes.
Remove baking beans and take out the tart shell from the mould.
Pour in ½ your egg and milk mixture, then your vegetables. Then cover with the other half of your mixture. This will prevent your spinach from sinking to the bottom of the quiche.
Bake for 40-50 minutes or until filling has set.
After removing from the oven, allow quiche to cool for 15 minutes, then serve.
