Dan Dan done the WhatIF way with our BamNut Noodles
1 BamNut Noodle cake
Chilli oil – based on own preference
29g light soy sauce
25g Hoisin sauce
8g peanut butter
150g chicken broth
½ cup baby spinach
25g sesame oil
55g minced chicken
½ cup black fungus
1 small shallot
1 spring onion
Combine soy sauce, hoisin sauce, honey vinegar, peanut butter and 55g of water in a bowl.
Cook noodles for 3 minutes in boiling. Drain noodles and set aside.
In a bowl or small pot, add chicken broth and ½ of mixture and bring to simmer. Add in baby spinach. This takes about 2 to 3 minutes. Once done, set aside.
In a frying pan, add sesame oil and minced chicken and stir fry until cooked.
Add black fungus and shallot and cook for another 2 minutes. Add remainder of sauce mixture and cook until sauce coats the chicken.
Add cooked noodles to soup and top with cooked ingredients. Add chilli oil as desired.
